15 questions with Michelin starred Chef Paulo Airaudo of Amelia Hong Kong



1) Why use “Amelia” your daughter’s name to be the name for the restaurant? What’s her favourite food? Do those dishes affect to your own cuisine?

Amelia was founded in 2017, and my daughter is actually named Amelie. Amelie loves pizza, so it’s not reflected in my culinary style.

2) What’s kept and what’s the difference between HK and San Sebastián Amelia?

Amelia in San Sebastian is more of a fine dining style, we only serve tasting menu, and the capacity is lower; in Hong Kong, we try to adapt a relaxed style. We serve big plates and small plates in our à la carte menu, hope to let our diners enjoy nice drinks and chill in Amelia.

However the creation, essence of food and ingredients use are similar.

3)Why Hong Kong is the destination after Spain?

Hong Kong is a nice city. I visited Hong Kong for a few times, really love the cuisines and vibe here. Hong Kong is a place with large potentials. I would definitely want to create something very beautiful for diners here.

4) Do you use Sustainable ingredients?

We use the fresh and the best ingredient we could source.

5) What is your life motto?

To enjoy my life and work. I like waking up in morning and having nice food in my day.

6)What Is your favourite European cuisine for celebrating new year?

I like Italian Homemade cuisine. We spent times together, enjoy our moment.

7) How often do you prepare your own meals? What’s that?

I don’t eat in family that much, and when I do, my wife cooks for me. She is a good cook.

8) If you could only eat one thing for the rest of your life, what would it be?

I would eat meat, as most Argentinian I like meat.

9)If the one you love will cook for you, which dish is your most favourite?

I will choose homemade food, and my favourite dish is Cotoletta alla Milanese

(Cotoletta alla milanese ([milaˈneːze] after its place of origin, Milan) is a fried cutlet similar to Wiener Schnitzel, but cooked "bone-in". It is fried in clarified butter only and traditionally uses exclusively milk-fed veal.)

10)What are the life-time meaningful dishes for your own choice? (You may choose three dishes)

I like eating fresh fish.

11)What is the best meal you've ever eaten in Hong Kong?

I like eating different food, changing flavours everyday. Snake soup and classic Hong Kong food is my favourite

12)What is the top destination on your bucket list?

I personally don’t have bucket list because I enjoy travelling to different countries, I believe people should jump out of their comfort zones to experience different cultures.

13)How many countries have you been to? Which is your favourite country? What’s the meaning of travel for you?

As a guy who speaks 6 different languages, I travel to learn and enjoy my life. Travelling to me does not only mean holiday, I don’t like routine, and doing regular stuff everyday. I love working and meeting different people everyday.

It’s difficult to count the countries that I have been to. I travelled to different Asian countries like Thai, Malaysia, I enjoyed visiting these two countries.

14)If you had to describe Hong Kong in one word, what would it be?

I would use ‘Amazing’

15)Who is the best teacher you've ever had, what is one important lesson that they teach you?

I think ‘life’ is my best teacher. Work discipline is the most important lesson ‘life’ taught me.
